Here’s a high protein powered breakfast that will hit the sweet spot if you’re wanting something filling and satisfying!

ingredients:

dry –

30 gr dry instant oatmeal

2 Tbsp + 1 1/2 tsp coconut flour

1/4 tsp of each: baking soda, baking powder, and ground cinnamon

1/2 scoop of strawberry/banana whey protein powder (or just strawberry)

wet –

4 egg whites or 125 mL egg whites

1/4 tsp vanilla extract

1/8 cup warm water

In a medium bowl add all of the dry ingredients and stir with a spatula. In a small bowl beat the egg whites with a fork until they appear frothy, then add the egg whites and remaining  ingredients to the dry mix bowl. Stir with a spatula. If you find the mixture is too thick (ie the mixture doesn’t fall easily from a spoon) then add a bit more water.

Set a burner on high heat and spray with non-calorie cooking spray. Once the pan is hot, pour the mixture and change the heat to medium, cover with a lid. Let cook for 5-7 minutes or until the edges harden and bubbles appear on top. Flip over and let cook for an additional 3-5 minutes.

Best served with calorie-free syrup or some low calorie jam. Enjoy!
