This is one of my daily meals that I look forward to each night. Its quick to prepare, has a mix of different textures and great flavours. Call me strange, but I consider it a mock version of a peanut butter & ham sandwich. The barbecue flavoured broad beans are crunchy and tastes just like a barbecued cut of meat and with the peanut butter added in, it really does fool the brain. And by baking & broiling the brussel sprouts, you don’t get that mushy texture of the vegetable (which I can’t stand and I’m sure some of you can’t either). The broiling is necessary to add the crispy charred flavour, so don’t skip that step.
