Here’s a healthier version of taco salad if you’re craving a refreshing and flavourful salad without the extra fat and calories.
ingredients:
2 boneless, skinless chicken breasts (90 gr/3 oz. per breast)
1 head iceberg lettuce
1/2 cup salsa
4 Tbsp plain fat free greek yogurt
dash of himalayan (or sea) salt
dash of ground black pepper
optional: hot sauce
Using a grill, spray the surface with non-calorie cooking spray and grill the chicken breasts on medium-high heat for 5-7 minutes and both sides. Before taking the meat off the grill, check that the centre (with a knife) of the meat is white (there shouldn’t be any pink tint to the meat). Set aside and let cool for a few minutes.
Cut the stem off the lettuce, and cut in half. Rinse the halves and then place on a cutting board and chop into bite-sized pieces.
In a large bowl, place first the salad, salsa, and then greek yogurt. Cut the chicken into strips and place overtop. Season with salt and pepper, and hot sauce if you like the hot stuff. Enjoy!
